Paula Deens Gooey Butter Cake


For Valentines Day this year Mike and I went to Savannah, Ga to go to my girl Paula's restaurant.  We had the most amaaaazing food and Mike absolutely LOVED her gooey butter cake. That chick does not play around. He has been craving that ooey gooey buttery heaven and requested I make it ASAP. If you are dieting this cake is the devil. It has a WHOLE box of confectioners sugar, not one but TWO sticks of butter. Her restaurant served it cold, so I roll their way. We obviously have some right when it comes out of the oven as well, because I mean..c'mon.....fat kids like cake. :)  recipe as follows

Ingredients:

Cake:
1 18 1/4-ounce package yellow cake mix
1 egg
8 tablespoons butter, melted
Filling:
1 8-ounce package cream cheese, softened
2 eggs
1 teaspoon vanilla
8 tablespoons butter, melted
1 16-ounce box powdered sugar

Directions

Preheat oven to 350 degrees F.
Combine the cake mix, egg, and butter and mix well with an electric mixer.

Pat the mixture into the bottom of a lightly greased 13 by 9-inch baking pan.

Prepare Filling:
In a large bowl, beat the cream cheese until smooth.

Add the eggs, vanilla, and butter and beat together.

Next, add the powdered sugar and mix well.

Spread over cake batter and bake for 40 to 50 minutes.

Make sure not to over bake as the center should be a little gooey.
 Chill in Fridge for about 2 hours or overnight. cut, serve and ENJOY!

This is just amazing. I made it twice. The first one was too done, so I tried again. I just can't make it look like yours. The top was all lumpy and ugly. Any guess as to what I'm doing wrong. It was incredibly delicious, but ugly.

Hi Marie,
I wish I could be more help but i'm not sure what would be making your top lumpy. Is your cream cheese softened? sorry I don't have any suggestions. :( At least it tasted good! lol. That's the most important. I've done them in cupcake tins too and they really should be a sin. ha ha.
