Cake Balls

My blog has been lonely so I decided to make some cake truffle balls today! It felt like a good ol "Hey it's Wednesday! Let's make some cake balls just because!!" type of day!  This cake ball is super easy to make. The coating can be time consuming, but in the end it's worth it. :) It is made up of a box of cake mix, a can of frosting and whatever coating you want.  Literally, that's it! You can try any cake/frosting combo you want! I did a yellow cake with chocolate frosting.  I want to try Bakerellas red velvet cake balls which is where I got the idea. I loove red velvet but I had this stuff on hand.  I would also like to try a German chocolate cake with pecan coconut frosting dipped in chocolate. :) oOo and lemon cake/vanilla frosting dipped in white chocolate! the possibilities are endless!! have fun!!

Ingredients
1 (18.25 ounce) package yellow cake mix (bake as directed)
1 (16 ounce) can chocolate frosting
Melting chocolate and coatings of your choice
 Bake cake according to directions. When done take out of oven and crumble when cooled completely.  Then mix with 1 can of frosting.
 I just used a large offset spatula.
 They sell this cookie scoop at Michaels. $2.99
 Scoop first, Ball later.
 Round out the scoops into balls.
 Refrigerate until firm about 2-3 hours or overnight.
 Dip in whatever type of coating you'd like! from left to right I rolled mine in crushed cocoa almonds, cocoa powder, powdered sugar, chocolate coating then sprinkles, semi sweet chocolate coating.

update: I made cake pops for my sister in laws shower, they were a hit! Just make your cake balls and stick them on a stick! so simple. :)

 
update: Made strawberry with cream cheese icing, dipped in white chocolate with sprinkles. fantastic!!
