100 Calorie Chocolate Banana Souffle

 Say what??? A low cal, low carb, 2.25 W.W pt chocolate banana souffle??? COUNT ME IN!!. sorry I've been M.I.A. I fell into a slump called the DEVIL aka fast food, erego no baking or cooking was going on in my house.  There was a LOT of gyros going on, milk shakes, double cheese burgers, chicken nuggets with large fries and the list goes on!! lol. But I'm back on track and joined Weight Watchers 2 weeks ago. I'm only 4 pounds down but what is that saying? the slow horse wins the race? or the slow turtle?...whatever it is, I'm trying to say the slow way of losing weight is the right way. lol. It's a lifestyle change that I'm ready to take. I made a chocolate banana souffle off of the other night.  It's funny how accomplished you feel when you make something with such a fancy name, but it's so simple.  It should definitely be eaten right out of the oven.  They fall after about 5-10 minutes.  I had one the next morning and it wasn't AS good, but still a tasty treat.  I had very ripe bananas which we're becoming more ripe every time I opened the fridge. I swear they became darker by the hour!! I had to think fast of what to make with them. Being on weight watchers I can't just make a fatty banana bread like I would've wanted to...and trust me...I wanted to...buuut instead I went the healthy route. I was quite impressed with how yummy these we're for being so healthy. at only 112 calories a serving they are definitely figure friendly. : )  I found a W.W. recipe website by Gina and everything looks so yummy, I am going to try and make something off the website every month. :)  This dessert was the first thing I have made from the site and so far so good. Hope you guys enjoy the souffle! I sure did!!

Recipe adapted from Ginas weight watchers recipes.

Servings: 4 • Serving Size: 6 oz Calories: 112 Points: 2.25 pts
  • 2 ripe bananas, mashed
  • 2 tsp cornstarch
  • 1/4 cup cocoa powder
  • 1 tsp vanilla extract
  • 2 egg whites
  • 3 tbsp sugar
  • butter flavored cooking spray
Preheat over to 400F. Coat 4, 6 oz ramekins with butter flavored cooking spray. Place on a baking sheet.

(I made 6 servings so I adjusted the ingredients, the recipe is for 4)

In a medium bowl, mash bananas and vanilla together. Sift cornstarch and cocoa powder over bananas and stir well.

In another medium bowl, beat egg whites with sugar until they form soft peaks.  

Fold 1/3 of egg whites into banana mixture. When incorporated, fold in the rest of the egg whites. 

Spoon mixture into ramekins.

Wipe the top 1/4 inch “collar” of the ramekin to remove any excess batter so that the souffle will rise straight and place ramekins on a baking sheet. Bake at 400°F for 15 minutes. Serve immediately.

Notice some of mine did NOT go straight up. lol. I wiped the collar. It's a mystery to me.

ha ha this is not 2.25 pts with the ice cream. a tsp of sugar is 0 pts.
